Homemade Italian ice cream is tasty, but many people ask us how to make it without milk, whipping cream or eggs. It is certainly possible and it is just as delicious!
We have collected our 35 most original recipes in a vegan ice cream recipe book, available in e-book or paperback format.
Vegan ice cream cookbook
Italian ice cream, both the one from the ice cream shop and the one you make at home, contains a certain amount of fats and proteins that make it soft and creamy.
But the fats and proteins in ice cream do not necessarily have to be of animal origin: so we can use a wide variety of ingredients to recreate traditional flavors, or to create new ones.
Many vegan recipes replace whipped cream with coconut milk, which is high in fat. But this way all ice creams get a coconut aftertaste, which is more or less pleasant depending on the recipe.
The first recipe in our book is therefore a completely neutral flavor, which we call vegan Fiordilatte. Fiordilatte is the basic white Italian gelato flavor, and the ice cream we make with soya drink is similar in color and taste.
Based on this ice cream, we can then also create traditional flavors such as chocolate,cinnamon of vanilla ice cream.
In our recipes we also use other ingredients rich in fats and proteins, such as pistachios, hazelnuts, almonds, peanuts, avocado, and vegetable oils.
Our goal is to make an equally creamy gelato, but without using dairy products or eggs. Just as tasty and with exactly the same texture as traditional ice cream.
