Inspired by our traditional desserts, we have created 15 ice cream cake recipes with different techniques and original flavors. Everything you want to know to make a perfect ice cream cake at home, in our original ice cream cake cookbook, available in e-book or paperback format.
Our Italian ice cream recipes have become homemade quite popular.
But even better than ice cream is ice cream combined with cake. A frozen dessert which we prepare on special occasions.
That's why we were inspired by traditional Italian desserts to create 15 original, well-crafted ice cream cakes. We illustrate the recipes step by step and explain the preparation in detail.
Because we actually made the ice cream cakes, remade them when they didn't satisfy us, and ate them with great pleasure!
With unique ice cream flavors: pineapple & ricotta, pistachio biscuit, boiled apples & cinnamon, carrot cake, limoncello, orange & white chocolate, amaretti, hazelnuts & coffee, Bacio with dark chocolate and hazelnut, Amarena with cherries and meringues.
We use different techniques so that you learn to make different types of ice cream cakes: with a no-bake base, with sponge cake or shortcrust pastry, with chocolate or meringues. We combine base and ice cream in different ways and decorate with different types of icing.
To make ice cream cakes at home you need a bit of manual dexterity: that's why we've collected all our tips in this booklet.

A classic no bake cheesecake base with homemade yogurt ice cream and a layer of raspberry coulis.
In Italian we call rectangular cakes 🔊 tronchetto, which means small tree trunk. We alternate layers of dark chocolate with white vanilla ice cream.

One of the most famous ice cream flavors in Italy: 🔊 Amarena is milk ice cream flavored with cherries. We spread it on a base of meringues.
With dark chocolate 70%, cocoa powder and hazelnuts. 🔊 Baci («kisses») are chocolates that lovers traditionally exchange in Italy, and it is also a very popular gelato flavor in ice cream parlors.
In this recipe we make an ice cream cake that is taller than the cake pan, with layers of sponge cake (🔊 Pan di Spagna in Italian), yogurt ice cream and raspberry coulis. Perfect for a birthday.
Shortcrust pastry cake, 🔊 crostatain Italian, is also delicious frozen with ice cream. We bake the dough without contents and fill it with homemade apple-cinnamon cookie ice cream.
