Milk, whipping cream, sugar, banana pulp and no eggs. Mixed in the right amount they form a delicious homemade ice cream. We are Italians and share our recipe with the ice cream maker

All fruit ice creams, including banana, can be made in two ways: as sorbet ice cream, with water and sugar; or as proper ice cream with milk and cream, based on the recipe for milk ice cream.
The first is a cold summer dessert, in which the fruit flavor is very strong.
In ice cream instead, which we make on this page, the taste of the banana is softer; and thanks to milk and whipped cream, the texture is creamier.

Either way we do not add eggs, as these are not always necessary with homemade ice cream, plus their flavor alters the taste of the fruit.

Notes on the ingredients

In our recipe we use whole milk with 3.5% fat and fresh cream with 35% fat.
The ingredients must be cold, straight from the refrigerator.


Measuring the ice cream ingredients

Ww write all ingredients in ounces and grams, even liquids: so we measure them all the same way.
Simply weigh each ingredient on a digital kitchen scale and add it to the mixture.


The ice cream maker

p>To make the banana ice cream, we used a classic model compressor ice cream maker. The steps are the same for most ice cream makers, even those with a freezer bowl.

Instructions

  1. Cut the bananas

    Peel the bananas and cut them into small pieces.

    You can sprinkle the bananas with a few drops of lemon, this way they will remain white; the ice cream won't taste like lemon.

  2. Turn on the ice cream maker

    First turn on the compressor ice cream maker.
    It usually takes about 10 minutes to pre-cool it, ready to make ice cream.

    If you use an ice cream maker with a freezer bowl, the basket should be well frozen after enough hours in the freezer.


  3. Mix the ingredients

    Pour the ingredients into a bowl.
    Liquids first: milk and whipping cream. Then the sugar and the pieces of banana.

    With an immersion mixer, blend the ingredients until a smooth and homogeneous mixture.

    ๐Ÿ‘‰ A foam forms on the mixture: this is normal and is due to the whipping cream. Just mix it with a spoon to flatten it.

  4. Pour the mixture into the ice cream maker

    Then pour the ice cream mixture into the ice cream maker.
    The ice cream maker must be properly pre-cooled. Some models display the interior temperature: we wait until at least -13 ยฐC / -25 ยฐC.

    To pour the mixture into the ice cream maker, use the opening on the lid: this way the cold will not escape.

  5. Let it mix for 30-40 minutes

    You can view the mixture through the clear lid of the ice cream maker.
    After about 15-20 minutes the mixture starts to collect air and slowly becomes a soft ice cream.

    Depending on the ice cream maker and the amount of ingredients, the ice cream should be ready within 30-40 minutes.
    Usually the stirring arm stops when it can no longer mix the ice cream.
